Buttered Cured Sheep Cheese, traditional recipe. Thin, smooth crust, well formed, straw yellow colour and uniform. Paste closed, slightly yellowish white colour, uniform and buttery texture. Malleable consistency, allowing some fluctuation (to the touch). Bouquet soft, clean and slightly acidic.
