Books Country Ovilos Cabernet Sauvignon 2021 (bio) 0.75L Dry Red Local wine of Pangaio Varieties:100% Cabernet Sauvignon It comes from the Cabernet Sauvignon variety, specifically from the first vineyard of the Estate planted at the foothills of Pangaio. It is a wine of great aging potential, produced from long extraction of the grapes and aged in new French oak barrels for 16 months. It follows a maturation of at least 24 months in bottle. It has a deep black-red color with exceptional aromas of raspberry jam, red fruits, violet, harmoniously intertwined with aromas of cedar, smoke, and milk chocolate in a masterful blend. Its taste is full, rich with impressive structure and skillful balance between acidity and its good, generous tannins. It has a long aftertaste and will reach the peak of its wine elegance after a few years. It can age for at least 15 years and is served at 16-18°°C.
